| Description | Commercial food sources, particularly restaurants, grocery stores, and farms, contribute most to the surplus supply. Yet while grocery rescue programs are well-established, rescuing food from restaurants poses unique logistical and regulatory challenges. Mapping tools can play a key role in bridging this gap by identifying food donors and recipients and guiding strategic partnerships. Prepared by the University of Washington DEOHS Hovis Lab for the Washington Center for Sustainable Food Management. |
